Moist Prune Cake


I can´t remember where I found this recipe but it has proven to be really good! Nice and moist like the Prune Cake we buy at Becky´s Kitchen.
Cake:
1 c olive oil
3 eggs
1 1/2c sugar
2 c all-purpose flour
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 c kefir or buttermilk
1 tsp vanilla
1 c prunes (pitted and chopped)
1 1/2 c pecans or walnuts (optional)
Cake Sauce:
1/2 c butter
1 c sugar
1/2 c kefir or buttermilk
1/2 tsp vanilla
1/4 tsp baking soda
Procedure for cake:
1. Preheat oven to 175C (or 350F). Grease and flour pan. (I´ve tried this on a loaf pan, rectangular pan, and round springform pan. They all turned out ok).
2. In a medium bowl, mix together flour, soda, salt, and cinnamon. Set aside.
3. In a large bowl, combine oil, eggs and 1 1/2 c sugar. Mix well.
4. Add flour mixture, alternating with 1 c buttermilk, starting and ending with the dry ingredients. Beat well after each addition.
5. Stir in prunes, nuts and vanilla.
6. Pour into prepared pan and bake for 1 hour or until a toothpick comes out clean when insterted in the center.
Procedure for cake sauce:
1. Combine butter, sugar, buttermilk and vanilla. Bring to a boil.
2. Remove from heat.
3. Add baking soda and stir.
Assembling cake:
1. Make deep holes all over the hot cake (by poking with a knife or fork).
2. Pour cake sauce in the holes and on top of the cake a little at a time, giving it time to soak in.
